Utah's election systems are overseen by the Lieutenant Governor, Deidre Henderson. So far she complied with the first DoJ request, providing publicly available data, as described in state law.
It is possible the the DoJ will ask for other state data, which are private and stored securely in state data files. In her letter to the DoJ the Lt. Governor is careful in her wording, but appears to express concerns regarding whether she will release any other data.

Governor Henderson a note supporting her efforts. She is a Republican, but did not endorse anyone in the last presidential election - and expressed concerns about elected officials casting doubt on the outcomes of elections.
This is an opportunity to provide support for someone who can and may do the right thing, where most of us, regardless of political views, agree that the federal government has no right to our data.
